I thought everyone would enjoy a strawberry pie since this is strawberry season. I don't pick them from the field because I am too lazy! I bought these from the grocery store Friday. Look how huge they are!
I normally only buy a pint which will make two pies, but these were "Buy one, Get one Free". Slice strawberries and divide into two graham cracker crusts. Store bought, of course!
In a saucepan mix 1 cup sugar, 3 tablespoons corn starch and either 2 small boxes or 1 large box of strawberry gelatin.
Gradually add 1 cup of water. I usually add a little at a time so mixture won't get lumpy. Heat to a boil over medium heat, stirring constantly.
Once mixture comes to a boil, remove from heat and pour over strawberries. Try to get the same amount in each pie shell.
Let cool and then place in refrigerator until set. Once gelatin is set, top with whipped topping and enjoy!
I have also made a peach pie using fresh peaches and peach gelatin. If you get sugar-free gelatin and fat-free whipped topping, you can eat some without feeling guilty. Hope you enjoy!
