Waiting for Santa

Hope everyone is ready for Santa Claus! Instead of cookies and milk, I'm going to leave a slice of this delicious strawberry pie.

I made one yesterday and Gavin took what was left home with him. So, I made two more today. Find the recipe here.
Merry Christmas!

Ice coffee

I love McDonald's Iced Coffee so when I found this recipe on Pinterest, I was ecstatic. It is so easy and tastes just like McDonald's. Here is the recipe:
Brew 10-12 cups of coffee (I used decaf). Add 1/2 cup of brown sugar, 1/2 cup of white sugar, and 1/2 cup vanilla flavored creamer. Refrigerate until cooled. Add ice (optional) and enjoy!
This was too sweet for me, so I cut portions to 1/4 cup for sugars and creamer. I also use sugar-free vanilla creamer. Try it, you'll like it!

Homemade donuts

My youngest grandson, Sloan, and I made homemade donuts this afternoon. We got the "recipe" from an employee at the local China Buffet. According to him, "very simple! Go to Wal-Mart and get some biscuits". Who knew? Here's how we made these delicious, fattening but easy donuts:

Canned biscuits - We started out making balls of each biscuit, but it works better just leaving them flat as they come out of the can.

Drop into hot oil - must be at least 325 degrees, but I turned my oil up higher.

Turn each biscuit as it browns; remove when golden brown and roll in sugar. I had some cinnamon sugar left over from making french toast.

Cool, if you can wait that long, then enjoy!

Barbeque and family

We had a storm come through this afternoon and it kept knocking the power off, so I was unable to visit any blogging friends. The satellite was out so I watched my new DVD, 'The time Travelers Wife'. Great movie but as always, the book is better.
We went to Courtney's Bar-B-Q in Clover this afternoon. Hard to believe that this was the first time that we have ever eaten there. Very nice place; will have to visit again.
Waiting on our order to come................
Justin's trying to catch a nap while waiting....
Sloan always enjoys eating....
Fried pickles...Yum!
 Great hushpuppies.....
 Gavin loves the ribs.............

 and so does Sloan...
I had chopped barbeque although I should have ordered a baked potato instead of the baked beans!
Time for bed. I'll try to visit tomorrow. Nighty-night!

Strawberry Pie

Happy Rednesday! Sponsored by Sue at It's a Very Cherry World.
I thought everyone would enjoy a strawberry pie since this is strawberry season. I don't pick them from the field because I am too lazy! I bought these from the grocery store Friday. Look how huge they are!

I normally only buy a pint which will make two pies, but these were "Buy one, Get one Free". Slice strawberries and divide into two graham cracker crusts. Store bought, of course!

In a saucepan mix 1 cup sugar, 3 tablespoons corn starch and either 2 small boxes or 1 large box of strawberry gelatin.

Gradually add 1 cup of water. I usually add a little at a time so mixture won't get lumpy. Heat to a boil over medium heat, stirring constantly.

Once mixture comes to a boil, remove from heat and pour over strawberries. Try to get the same amount in each pie shell.
Let cool and then place in refrigerator until set. Once gelatin is set, top with whipped topping and enjoy!
I have also made a peach pie using fresh peaches and peach gelatin. If you get sugar-free gelatin and fat-free whipped topping, you can eat some without feeling guilty. Hope you enjoy!
